Quinoa Salad

Description: A high protein grain that is either white or red in color, quinoa as a whole grain is a complete protein that contains nine essential amino acids. It is gluten free and high in magnesium, vitamin B2, and iron. With the added nutritional benefits of olive oil, lemon juice and antioxidant rich vegetables and fruit, this is a truly satisfying and tasty dish!

Ingredients:
2 cups white quinoa, rinsed
4 cups water
1/2 red onion
1/2 cup parsley
1/2 cup celery or carrots
1/2 cup dried cranberries
1/2 cup raisins
1/4 cup olive oil
Juice & zest of 1 lemon
Pinch of sea salt

Directions:
Bring water to boil in saucepan. Rinse quinoa in fine mesh strainer and add to boiling water. Return to a boil, reduce heat to simmer, cover and cook for 12-15 minutes or until water is absorbed. Remove from heat, uncover and let stand 1 – 2 minutes.

Place cranberries and raisins in small bowl and cover with water. Soak fruit while quinoa is cooking. Strain to remove water before adding to large mixing bowl.

In a large mixing bowl, add finely chopped vegetables, olive oil, lemon juice with zest and sea salt. Add soaked dried fruit and mix well. Add cooked quinoa, combining all ingredients. Serve warm, or chill to serve as a cold salad.
